Sticky Cauliflower Recipe

WHAT TO DO:

Break or cut the cauli into bite sized pieces

Mix the batter dry ingredients in a large bowl – try and choose one big enough to fit your cauli in too. Then add milk or water and whisk until smooth

Either whack your cauliflower into the batter bowl and mix until coated or dunk each piece to coat. This is a little fiddly but so so worth it

Bake on a lined tray for 20ish mins at 180 or until a little golden looking

While the cauli is in the oven, combine all sauce ingredients, except corn flour, in a pot, pan or a microwavable jug. I’m all about keeping it simple so you can bet what I do here

Heat in 30 second spurts or over a low heat, stirring to combine as you go
Don’t boil it, just gradually get it hot

About now you want to get your pasta going

Once the sauce is hot, scoop a little bit out and dissolve the corn flour, then sir through the sauce and continue to heat until thickened, you want tomato sauce kinda consistency

OPTIONAL: Heat olive oil in a pan and quickly stir fry your cauli to get it crispy

Combine cauliflower and sauce then serve over your pasta, top with sesame seeds to make it fancy and enjoy!

JAZZ IT UP: Try this same cauliflower with your fave sweet and sour, teriyaki or adjust the batter seasonings and make tacos. Coat some tofu in cornflour and fry in a little olive oil, add this to the cauliflower to add some extra protein. Stir fry some extra vege to add some colour. Serve over rice, quinoa or salad instead of pasta!
