COOKIE BALLS

SERVES: 8-10 Balls

WHAT YOU’LL NEED:
1C Ceres Organics roasted and salted cashews
1/2C Ceres Organics quick cook rolled oats
2T Ceres Organics Cacao Nibs
2T Ceres Organics Maple Syrup
1T Chantal Organics Peanut Butter
1/2t Flavorganics Vanilla Extract

Cookie Balls Recipe

WHAT TO DO:

Add cashews and oats to a food processor or blender and process for a few seconds – you want chunks here, not powder

Add all other ingredients, yeah, just whack ‘em all in

Process until the mixture looks combined – it will be sticky

Roll into balls, wet hands can help stop the mixture staying on your hands

Leave to set in the fridge… if you can resist them!

SWITCH IT UP:
To make these a little lower in sugar switch to 1T sweetener and 2T nut butter

Switch the nuts or nut butter to any nut or seed you like

You could also press this into a slice and cut into bars or squares to save the fuss, these would be perfect topped with dark choc!

JAZZ IT UP:
Add choc chips in place of cacao nibs
Add dried fruit like raisins or cranberries
Add banana chips
Add seeds
