CAESAR SALAD

TIME REQUIRED: 15 mins prep + 30-45mins cook time
SERVES: 2

WHAT YOU’LL NEED:
Romaine lettuce (or use iceberg like I did if you can’t find any)
Dressing:
3T Vegenaise (or use your fave soy free mayo)
1t Bragg Nutritional Yeast
1t Crushed garlic
1t Lemon Juice
1/2t Black pepper
Salt to taste
Splash of water if needed

Croutons:
2 Slices of your fave bread (use gluten free if needed)
1T Ceres Organics Olive Oil
1t Ceres Organics garlic powder
1t Ceres Organics onion powder
1/2t Dried Parsley (optional)
Pinch of salt (optional)

Jackfruit:
1 tin Natures Charm jackfruit
1T Olive Oil
1t Jada Brands Chicken Salt
1T Ceres Organics Garlic Powder
1T Ceres Organics Onion Powder
1t Dried sage
1t Dried rosemary
1t Dried parsley

Vegan Caesar Salad

WHAT TO DO:

Preheat your oven to 180°C bake.

Let’s dive in with the croutons first, dice the bread and toss in a bowl with the oil and flavorings until evenly coated.
Pop them in the oven for about 10 minutes – turn them halfway if you like and definitely keep your eye on them!

While the croutons are in the oven, rinse and drain your jackfruit. Using the same bowl as the croutons (we’re not here for extra dishes) add the jackfruit and then mix with the oil and flavourings to coat well. 

Once the coutons are done, set them aside to cool and put the jackfruit in to cook.

It takes about 30 minutes to get it beautiful and soft. Check it every 10ish mins and don’t be afraid to move it around and start tearing it up with forks as you go.

Leave it another 10ish mins to get a bit of crispy deliciousness happening – I definitely recommend it

While your jackfruit is cooking, mix up the ingredients for the dressing and pop in the fridge until you’re ready to assemble.

Once everything is ready (you can let the jackfruit cool slightly or just dive in once it’s looking how you’d like) chop the lettuce and plate it, follow up with the croutons, jackfruit and the dressing. Or you can toss everything in a bowl with the dressing to get it all coated.

JAZZ IT UP:

This salad can be whatever you want it to be!

Add some vegan bacon, or tofu for a hit of protein

Add some chickpeas or vege when roasting the jackfruit: mushroom, onion, capsicum, courgette, potato, kumara, or pumpkin – any or all of this would be tasty and will go a long way in bulking up your salad

Add more salady things: cucumber, carrot, red onion, olives, vegan parmesan, avo, tomato, nuts or seeds!
